When Christmas season rolls around, everyone starts bringing out the eggnog. You’ve likely had some good eggnog as well as some so bad you had to force the drink down to avoid offending the host. Start by gathering your ingredients. Keep in mind that you can use more or less rum than stated in the recipe. That’s really a matter of personal taste.

  • 4 cups of milk
  • 5 whole cloves
  • 1 teaspoon of ground cinnamon
  • 12 egg yolks
  • 1 ½ cups of sugar
  • 2 ½ cups of light rum
  • 4 cups of light cream
  • 2 ½ teaspoons of vanilla extract
  • ½ teaspoon of ground nutmeg

Step 1

Put the cinnamon, cloves, and milk in a saucepan. Then, add ½ teaspoon of the vanilla extract. Turn the burner on low until it comes to a boil. This should take about five minutes.

Step 2

Put the sugar and egg yolks in a large bowl. Use your whisk to combine the ingredients, stopping once they are fluffy.

Step 3

Pour the milk mixture into the large bowl and combine everything with the whisk. Turn the burner on medium heat and cook it until it’s thick. Stir it constantly during this process, and if it comes to a boil, turn the burner down. Strain the mixture to remove the cloves, and then let it cool. That takes approximately one hour.

Step 4

Add the nutmeg, rum, and remaining vanilla extract into the mixture. Stir everything together, and then put it in the refrigerator. It’ll be ready to go the next day.
